ROASTING
The Nannini tradition has always been synonymous with high-quality coffee. This began at the beginning of the last century, when Guido Nannini met some Brazilians passing through Siena. In their stories, they told him about the cultivation and blending of coffee, a process that was little known in Italy at the time, but widespread in their country. Thus was born his passion for coffee, so much so that it was the first, in the
city of the Palio, to replace the old coffee maker with a revolutionary instrument for the time: a steam engine that produced a drink so pleasant that it quickly gained a large following of admirers. Thus was born the story of the Nannini expressed that Alessandro, having put aside his Formula One racing suit, dedicated himself to bringing outside the walls of Siena. A pleasure to be enjoyed at the bar or
home through various solutions: ground or in beans, up to capsules and pods suitable for the most popular espresso machines.
We source the finest coffee origins from every producing region in the world: Brazil, Mexico, Colombia, Uganda, Kenya, Ethiopia, India, and Vietnam. But only after our roaster assesses their quality and characteristics do they arrive at the facility. Here, the green beans are stored in a silo with 16 compartments, each dedicated to a single origin.
It's the details that make the difference: Nannini coffee is born from a unique approach: roasting each type of green coffee separately, without blending them raw. Only in this way are the unique characteristics of each origin preserved: the aromas and the distinct reactions triggered by the roasting process.
The roasting process combines technological innovation and artisanal expertise: the management software ensures roasting consistency, but it is the roaster, drawing on his thirty years of experience, who adjusts the roasting curves based on the type and characteristics of the green coffee. This ensures consistent flavor in the cup. Ours is a "light" roast, with slightly shorter roasting times than usual, to prevent the product from expressing excessive bitterness in the cup and from appearing "wet."
Blending is where the true art of the roaster comes into play, as he takes on the role of a chef to create the perfect blend. This is where experience and the ability to let the senses guide the blending of different coffees come into play. At this point, the blend remains for a few more days before being ready to receive the Nannini brand.
