Coffee tagliatelle with white meat sauce. A particular recipe suitable for coffee lovers. Intriguing and mouthwatering, this dish will make you experience the intense flavor of coffee in a new version. Try it and you will not regret it.

Ingredients

For the noodles

- 100 g 00 flour

- 100 g re-milled semolina flour

35ml di coffee (about 1 cup of coffee)

- 5 g coffee in powder   

- 1 egg

- 35 ml Water

For the ragù

- 250 g minced meat

- 1/2 glass White wine

- qbsale and pepper

- 2 tbsp Extra virgin olive oil

- 25 g Raisins

- Half a carrot

- Half onion

- Half a stick of celery

- 1 pinch nutmeg

- to taste pine nuts

Method

First make a coffee and leave it aside to cool. Clean your work surface and sift the two flours on it. Then take the ground coffee and combine it, mixing well.

In the middle of the powders create a recess, the so-called fountain, and add the egg. Stir with a fork, slowly add the previously prepared coffee and 35 ml of water. 

In the next step to prepare the coffee tagliatelle with white sauce you have to work the dough with your hands until you get a smooth, homogeneous and compact dough. A little more water may be needed if the mixture is too dry. Once this is achieved, cover it with plastic wrap and let it rest for half an hour.

Meanwhile flour your work surface and after 30 minutes roll out the dough with a rolling pin until you get a sheet of about 3 mm high. Flour the pastry well, roll it up and cut many strips. Just cut April and place them on the floured work surface. Then let them dry for some time. We advise you not to make them too thin, otherwise there is a risk that they will not withstand cooking.

If you have a pasta machine you can get the strips by positioning the roller on notch number 6. Flour the dough well and then make the tagliatelle with the appropriate tool.

Now, instead, take care of the sauce and soak the raisins in warm water. Wash and clean the vegetables thoroughly and chop them finely with the help of a mixer. In a saucepan, pour the extra virgin olive oil and fry the chopped vegetables. Then add the minced meat and let it brown. Stir often with a fork in order to shell the meat and then blend with the white wine.

Continue cooking so that the alcohol evaporates. Then add salt and pepper to your liking, a pinch of nutmeg and the well squeezed raisins. Keep stirring but this time cook over low heat. If necessary, add a little broth or hot water. After about 30 minutes your ragù will be cooked to the right point.

At this point you are almost ready to taste the coffee tagliatelle with white sauce. Bring salted water to a boil (a generous amount) where you are going to boil the noodles. Meanwhile, take the pine nuts and toast them in a non-stick pan.

Then drain the pasta and put it back into the pot. Add half of the prepared sauce and mix well with the flame out, otherwise you risk spoiling it and making it overcooked. 

You are ready to serve! Use the remaining dressing to further flavor each dish. Finally add the toasted pine nuts and serve the dish.
